Recently my office has been stocked, and I mean STOCKED, with chocolate, candy and other assorted sugary craziness. I can’t take it anymore! Don’t get me wrong, I love a mini Recess Peanut Butter Cup as much as the next person, but this week I’m craving something a tad bit healthier and more natural to take me through to Friday. So, I whipped up these nutty energy balls that incorporate peanuts (in the form of peanut butter), walnuts and pecans. I loved the combination of the different nuts which makes for a great flavor profile.
This recipe comes together very quickly and simply requires a food processor. Perfect for a Monday night throw together with the perfect amount of sweetness from natural dates and dark, rich chocolate slivers. I added some shredded coconut as well just because I had it in the pantry. Try it out today and have a sweet day!
Ingredients: (makes 12 Energy Balls)
- 2 cups pitted dates
- 1/2 cup walnuts
- 1/2 cup pecans
- 4 tablespoons peanut butter
- 1/3 cup shredded, unsweetened coconut
- 1/2 tsp salt
- 2/3 cup chopped chocolate slivers (I used a 72% cocoa chocolate bar)
Combine the dates and nuts in a food processor and blend on high until it starts to form a paste. Add in peanut butter, salt and coconut and pulse until fully incorporated. Lastly, add in the chopped chocolate slivers and pulse again until the mixture is evenly studded with the chocolate slivers.
Roll into balls and place on wax paper or parchment paper. Eat and enjoy! I individually wrapped each one in plastic wrap so they are ready to go for snacks all week. Have a great week!
