I love the combination of blueberries and lemon. A match made in heaven! These energy bites combine the two in perfect harmony and are so easy to whip up. In my opinion, the lemon zest and sea salt are key. Once finished, these are rolled in lemon zest and shredded coconut which really allows the lemon flavor to shine. The natural sweetness from the dates contrasts perfectly with the sea salt. If you are looking for an easy, healthy and clean snack to carry you through the week, try these!

Ingredients:

  • 1 1/2 c unsalted cashews
  • 1/2 c unsweetened shredded coconut, plus more for rolling
  • 1/2 c dried blueberries
  • 3/4 c Medjool dates, pitted and roughly chopped
  • 1 T fresh strained lemon juice
  • 1 t lemon zest + additional for rolling (I used 2 lemons’ worth for the entire recipe)
  • 1/2 t pure vanilla extract
  • Pinch of fine sea salt

In a food processor, blend cashews and shredded coconut until they become a coarse meal.

Add blueberries, dates, lemon zest, lemon juice, vanilla extract and salt.  Process until the mixture becomes a rough dough that holds together easily when pinched between your fingers.

Roll into small (1 to 1 1/2-inch) balls.  Roll the balls into a mixture of coconut and lemon zest.  Flash freeze for 10 minutes and then store in the fridge for up to a week.
