The other night while thinking what to serve with some leftover bean/cabbage/veggie soup I remembered…oh yes, popovers! Popovers are so easy and make a great side dish. They are buttery and flavorful and total comfort food. The heat from your oven creates steam within the egg batter causing it to “pop” up and over the top of the pan creating a thin, hollow custardy “bread.”
Disclaimer: I do not have a popover pan. Yes, there are such things. Popover pans will create a more spectacular result but I use my plain old muffin pan and it works just fine. They may not look perfect but they are delicious nonetheless. This is a great recipe for the weeknight as the prep requires ingredients that most people have in their fridge and the process is quick and easy.
- 3 tablespoons butter, melted
- 2 eggs
- 1 cup milk, warmed for 30 seconds or so in the microwave
- 1 cup all-purpose flour
- 1 teaspoon kosher salt
Preheat oven to 400 degrees. Using a pastry brush, coat 8 muffin or popover cups with 1 tablespoon of the melted butter. Place the tin in the ovens for 5 minutes. While you tin is heating up in the oven, get out your blender. Blend the 2 eggs until light and foamy. Next, add in milk, flour, salt and remaining melted butter and blend until smooth.
Pour the batter evenly into the eight muffin cups and return to the oven. Bake until golden brown, about 35 minutes. I would suggest checking at the 25-minute mark depending on your own. You want them to be puffy and popping out of the cups! Remove from oven and serve warm.
Tip: I microwaved some more butter that I mixed with honey and maple sugar and glazed the top of these when finished. I suggest you try this tip too ;)
