Roasted Vegetables. One of my favorites. I’m a huge fan of roasting as it gives veggies a wonderful caramelized, smoky flavor. These asian garlicky, sesame roasted asparagus are a nice change from the traditional ‘salt and pepper’ roasted asparagus. The crunchy sesame seeds give the dish a nice bite and subtle nutty flavor which works well with the garlic and sesame oil.
The recipe is really simple and makes for a quick and easy side. The ingredients are as follows:
– 1 1/2 pounds asparagus, washed
– 1 tablespoon olive oil
– 1/2 teaspoon sesame oil
– 3 cloves garlic, minced or diced
– 3 tablespoons sesame seeds
– sea salt
First, wash your asparagus. Take one spear and snap towards the bottom of the asparagus. It will naturally snap where the asparagus becomes a bit hard. Use that as your guide for chopping up the rest.
Once chopped, spread on a baking sheet. Cover with the olive oil, sesame oil, minced garlic, sesame seeds and sea salt.
After you have covered the asparagus spears with your ingredients, it’s time to get your hands dirty! Rub everything together making sure the garlic, seeds and sea salt are distributed evenly.
Place in the oven for about 15-20 minutes or until lightly browned and golden.
Once complete, remove from the oven and serve immediately. I served these with spicy, garlicky shrimp and tumeric jasmine rice which made for a delicious combination! Roasting veggies is so easy and a staple in my weeknight dinners – whether it’s carrots, potatoes, root vegetables; or even asparagus like these!
